About this Product

Bella di Cerignola is a large meaty olive cultivar from Cerignola, Italy. It has a very mild, fruity and buttery flavour. They are crisp and fantastically buttery. Their hefty size renders them easily stuffable. Packed in a natural brine that contains nearly half the amount of salt than regular brine.

How to use

Excellent for aperitifs and appetizers; ideal for tasty snacks at any time of the day.
Before serving the olives you should rinse them to remove excess salt, then toss them in olive oil and serve them plain.
You can also mix the olive oil with chopped herbs and allow the olives to marinate, for at least 30 minutes before serving.

Recipe

Fresella and Bella di Cerignola Olives

Ingredients

4 Whole Wheat Freselle
Green olives Bella di Cerignola 100g
Guanciale 100g
Extra virgin olive oil q.b
White vinegar q.b

Guidelines

Take the freselle and crush them inside a container, wet them with water, turn everything well, after the freselle have softened, add a little white vinegar and extra virgin olive oil, mix the whole and let it stand for 10 minutes.
Meanwhile, take the bacon carefully cut into fine slices and without any addition of oil place them on a pan and brown them, then remove from heat.
At this point, place a portion of freselle on a spoon overlapping the bacon and decorate with Bella di Cerignola olives cut into slices.
