How to use

  • The yellow tomatoes can be used exactly like red tomatoes, in pretty much any dish or such as tomato chutney and ketchup.

Recipe

Pennette Pasta with Yellow Tomatoes and zucchine

Ingredients

  • 1 Can yellow tomatoes
  • 360g Dry pennette Pasta
  • 500g zucchini
  • 50g Parmesean PDO
  • 1 clove basil
  • Extra virgin olive oil
  • Salt

Guidelines

  • First of all , heat 5 tablespoons of extra virgin olive oil in a large non-stick pan and put the garlic cut in half and deprived of the central core.
  • Then, cook for a few minutes then add the yellow tomatoes and cook over high heat for a few minutes.
  • Add some salt to the yellow tomatoes, lower the heat and cook gently for about 10 or 15 minutes.
  • Boil a pot of lightly salted water and, when it boils, cook the pasta.
  • Cook the pasta until it is cooked but still al dente and drain it directly into the pan with the cooked yellow tomatoes.
  • Add two or three tablespoons of pasta cooking water to the pan and finish cooking the spaghetti by sautéing them in a pan for a few minutes adding the zucchini cream mashed together with the parmesean .
  • Add the grated Parmesan cheese and fresh basil and stir the pasta then serve hot on plates.
