About this Product

Archidamo Delicato is obtained from the traditional Salento blend, i.e. the combination of different varieties whish have been historically planted in this agricultural region, such as the Salento Ogliarola, Coratina, Cellina of Nardo’ and Leccino. Maintain this traditional blend guarantees the Italian excellence of Salento extra virgin olive oil.

How to use

This is a cold-pressed light-tasting extra virgin olive oil, that adpts well to every type of cooking, delicately bringing out all the various flavours in your recipe.

Caprese Salad

Ingredients

2 punnets cherry tomatoes
6 cloves garlic, peeled and slightly chushed
350g of dry large pasta spirals
250g of fresh bocconcini
Fresh basil
Archidamo “delicato” extra virgin olive oil
3 tablespoons of balsamic glaze
Salt and pepper

Guidelines

Start by preheating the oven to 190° C degrees fan bake.
Then take a baking dish and spread out the cherry tomatoes and garlic cloves.
Season, drizzle with oil, then roast for 15-20 minutes or unitl the skins have blistered.
Set aside.
Cook the pasta as per packet instructions, drain, and place into a bowl.
Add the roasted tomatoes and garlic to the pasta, then use your hands to tear the bocconcini into the mix, followed by the torn basil.
Pour over a generous drizzle of Archidamo delicato oil, then toss to combine.
Season with salt and pepper and serve warm with the balsamic drizzle.
