Sun-dried tomatoes are ripe tomatoes that lose most of their water content after spending a majority of their drying time in the sun. This sauce is produced with organic sun-dried tomatoes, typical food in southern Italy.
The pesto is ready to be poured over freshly drained pasta. To facilitate the distribution the sauce, it is advisable to dilute the pesto with a little of pasta cooking water. Pesto is perfect with “trenette” and with all types of it. Try it in combination with meat or fish main courses or to prepare canapés and salad tomatoes. Pesto is also perfect together with shellfish and fish carpaccio. The surfacing of the oil is common, so it is advisable to mix well before use.
